A few years ago, I developed this soup recipe for
Food & Wine, and
since then, it has become a staple in our household during the
winter months.
We've had the occasional cold snap — and soup has been on the menu pretty consistently
since October — but I can't say I'm quite ready for the heavy, squashy, saucy comfort
food dishes that fill our
winter meals.
Since we're talking about
winter (assuming you haven't clicked away in disgust), let's talk about
winter food.
Weekly market attendance year round has increased steadily
since April of 2009 when the market began opening throughout the
winter as consumers continue to seek out and buy locally grown
food directly from the farmers.
In the five years

since it is late
winter here in Utah, I figure it's a wonderful time to make some recipes using fermented and preserved
foods like generations before us would have done around this time of year.

foods; for example, look for
foods that are blue or purple like blueberries, blackberries and red cabbage (rich in flavonoids); yellow - orange

winter squash, papaya, and melon (rich in beta - carotene); red or pink
foods like tomatoes, guava, and watermelon (rich in lycopene); and green
foods like kale, spinach, and collard greens (rich in chlorophyll).
During spring, I find my body naturally drawn toward detoxifying
foods and fresh greens — probably because spring is the season to detox the liver and because my body is craving leafy greens after a cold
winter subsisting on mostly frozen veggies
since I almost live in the Arctic Circle.
I'm now on the 3rd bag of diamond naturals and his paws are back to normal and he doesn't scarf his
food down like a wolf that hasn't eaten
since winter.
