did not use the
yacon syrup but I don't think that's it.
You can also
do a straight swap with honey if you don't want to use the
yacon syrup — the end result will be a little sweeter that way, and higher glycemic.
It doesn't disappoint I start with two cups coconut oil, one cup peanut butter, walnuts vanilla salt and the
yacon syrup.
- Used almond meal from Trader Joe's instead of blanched almond flour (added some flour at the end when I was mixing it all together because it was a little wetter than I thought it should be)- Used mostly agave with about 1/8 C of maple syrup instead of
yacon - Used 1 tsp powdered ground ginger / 1 tsp real grated ginger - Used a little less than 1/2 C grapeseed oil (didn't measure — just read some of the above comments and didn't want to use too much oil

do for the
Yacon syrup.
Replace grapeseed oil with melted coconut oil
Do not use agave syrup at all Cut the amount of
yacon syrup in half (it's just so expensive!)
If you don't have the Coconut Secret products, you can substitute almond or hazelnut meal for the coconut flour; lucuma powder,
yacon powder, date sugar, or raw sugar for the coconut sugar; and
yacon syrup, agave nectar, or honey for the coconut nectar.
I
did sub melted butter for the grapeseed oil and molasses for the
yacon (didn't have them on hand).
Now I know what I'm
doing tonight;) I have a bit of molasses left, so I'll be using that instead of the
yacon syrup (which I don't have).
For those interested, I just
did a 1:1 replacement of molasses for
yacon syrup and they turned out tasty.
I don't have any experience when it comes to using
yacon syrup — but if you give it a try, let me know how it goes!

do not eat sugar, nor substitutes, nor aspartame, saccharine, stevia - due to the processing, and have stopped
yacon and agave - especially since Agave is now being touted as being cooked at a high temps before packaging.
