Yellow Beet Salad with Avocado, Oranges, Red Onion and Toasted Pine Nuts.
along with your Lentil &
Yellow Beet Salad (one of my favorites).
Not exact matches
I used golden
beets, so the
salad has a beautiful
yellow - orange color to it.
They are great in
salads, soups or as a side dish, providing a cheerful
yellow splash of color and a wonderful sweet, earthy taste (but milder in taste than red
beets).
Meal 2: HUGE fresh
salad with romaine lettuce, power greens, left over veggies from previous nights dinner (grilled onions, bell peppers, zucchini,
yellow squash), roasted
beets, cucumber, chicken, chia seeds, hemp hearts, avocado, and my homemade «Strawberry & Greens» dressing.
The base of the
salad is made with some golden
beets,
yellow squash and some beautiful summer tomatoes.
But this was not the only thing new to me, the
salad also presented me with
yellow beets, an alternative to the beetroot which is the one normally used.

Salad standouts include
beets & quinoa, with Surfing Goat Dairy cheese, red and
yellow beets, quinoa and fresh herbs; and a wedge Caesar with Waipoli Farms romaine, shaved grana padano, roasted garlic croutons and a sundried tomato Caesar dressing.
