Lemon olive oil polenta cake is a moist gluten free cake, perfect paired with yogurt, coconut whipped cream or vanilla ice cream and topped with fruit.
As per my usual method of an olive oil cake, I used greek yogurt instead of whole milk.
Greek yogurt and olive oil make the texture of this cake incredibly moist, and almond flour packs a flavorful protein boost.
