I think that Aonuma or someone at Nintendo said a while ago that the
tech demo is just that, and does not represent the aesthetics of the New
Zelda.
Sounds like the next
zelda game is going to have a similar art style to wind waker and not the
tech demo we all got excited about which would be a huge let down imo.
