Every time I make a recipe with
zoodles, my brain and taste buds perceive them as pasta, so I get to enjoy all my fave pasta
dishes, minus the carbs and calories.
I have a spiralizer and love zucchini
zoodles with pasta sauce and carrot or sweet potato
zoodles with my chicken curry
dishes.
Now this
dish honestly tastes just as good cold too, especially if you like crisp raw veggies, but since I prefer my
zoodles having that «pasta - like» feel, I simply sauteed mine for a few minutes on the stove and then just tossed them with the pesto sauce.
My
dish came out pretty good, just the
zoodles were a big wet mess with the pesto.

zoodles) right away OR ALTERNATIVELY... if you are using the «cheese» recipe, transfer the pasta, chicken, then sauce into a casserole

To avoid an overly salty
dish, use cold water to rinse the salt off your
zoodles or eggplant, and pat dry with a paper towel.
