pizza 1/4 cup olive oil 1 pound assorted heirloom tomatoes,
sliced 1 / 4 - inch thick 3/4 pound assorted
zucchini and yellow squash,
sliced 1 / 4 - inch thick 1 red onion, quartered 1 teaspoon kosher salt 1 teaspoon black pepper 4 ounces Fontina cheese, grated
I roasted thinly
sliced zucchini in the oven for 10 minutes while baking the
pizza.

In this Garden Fresh
Pizza, I used 2 radishes

zucchini, 1 yellow crooked neck squash, 1 red bell pepper, a sweet onion and for the topping green scallions.
Spoon
pizza sauce onto each
zucchini half, then top each with a
slice of mozzarella and four pepperonis.
If you just throw some sauce and cheese on a
slice of
zucchini, that is NOT
zucchini pizza!!
When making
pizza, for instance, it helps to put ingredients — like grated cheese, chopped olives, and
sliced zucchini — in shallow containers arranged in a row on a low table.
