Love the use of real poblano and
jicama, but wondering
about the ratio of 1 cup raw quinoa to a medium butternut (~ 2cups).
I'll be talking
about all that in a later post I never thought to juice
jicama, but now I have to try that at home sometime!
In the same large pan, add
about 1 tablespoon of oil and fry all the
jicama slices until golden brown.

Place the
jicama, beets, and oranges in separate bowls and toss each with
about one third of the vinaigrette.
If you think
about it,
jicama has a little bit of that taste that seems to be the bottom note of anise, fennel, tarragon, and maybe even basil.
