about 1/3 cup chickpea flour for
coating
Coat the bottom
of the pan with olive oil, or a mixture
of olive oil and butter (
about 1 teaspoon per onion).
Frost with a light
coat of buttercream to help seal in the crumbs (crumb
coat), then chill the cake for
about 20 minutes.
Continue to cook, whisking occasionally, for
about 5 minutes or until the mixture is slightly reduced and
coats the back
of a spoon.
Pour
about 3 tablespoons
of batter into the pan and tilt it around to
coat the entire surface evenly.
Fill each tortilla with
about 1/3 cup
of the chicken mixture, roll it into a cigar shape, then place in a casserole dish
coated with non-stick spray.
