Yesterday, I only had two ripe
bananas, but I did have
about a cup of pumpkin left over from your fabulous pumpkin bread (that i turned into amazing mini chocolate chip studded, maple frosted mini cupcake /
muffins).
Here's what I changed: I used a 15 - oz can of pumpkin (not pie filling — just pumpkin puree) in place of the
bananas; I swapped out the spices for
about 1 tsp each of cinnamon and ginger, and mixed those in with the pumpkin first; I opted for the larger volume of maple syrup from the original recipe, as the pumpkin wouldn't contribute sweetness the way the
bananas do; I baked the batter as a dozen standard
muffins, which took
about 20 minutes at 350.
I don't know
about you, but when I have many ripe
bananas and haven't frozen them — I quickly turn my sights to
banana bread or
muffins.

I thought
about banana bread or
muffins or something along those lines.
I will be trying this recipe without maple syrup as I think they can easily be made without — 30 ml contains
about 15g of sugar which is equal to
about 1.3 g of sugar per
muffin, the dates contribute 7g of sugar, the
bananas provide just under 1.8 g sugar per
muffin, the coconut milk provides less than a gram.
Fortunately I brought along a remaining corn
muffin, an organic
banana and an organic apple (have you read
about the GE apples the USDA just approved??)
So I decided to nix the Cooks Illustrated brownies I'd been thinking
about making and just make some simple
banana muffins with chocolate chips for the picnic in addition to the cake.
The good thing
about these
muffins is that they can be made anytime of the year as
bananas are always available with consistent quality.
So the idea of making
banana bread
muffins that only take
about 15 minutes to bake was the perfect compromise.
I'll bet you have heard
about my chocolate chip cookies, but have you tried my
banana muffins?
I've been known to bake
muffins with just
about anything I have in the kitchen — apples, carrots and pineapple,
bananas and blackberries.
After making these gluten free Coconut and
banana muffins I though
about maybe using apple sauce instead of
bananas.
Now that I think
about it, I should have called them
banana - apple
muffins.
And back to the yummy
muffins — they're so easy to make, with only 6 ingredients (+ a dash of salt) and they only take
about 5 minutes to toss together ingredients like
bananas, almond flour, and egg into a blender; mixing it up for around 15 seconds to get everything all nice and smooth.

What I love
about this Egg Replacer is that it doesn't add a flavour that most egg substitutes (a
banana, applesauce, pumpkin etc.) do to compete with the lemon in these Lemon Poppyseed
Muffins.
-- Soy or Rice / Quinoa milk instead of Almond milk — Canned 100 % Pure Pumpkin instead of the
bananas — Substitute whole oats for some of the flour — Add freshly ground flaxseed and chopped nuts (I like pecans)-- Bake in
muffin tins instead of a loaf (usually takes
about 20 - 25 minutes at 350 F, I make these weekly for school snacks and they're the bomb)-- Reduce sugar to 1/2 cup for more of a snack and less of a dessert — If I'm in a hurry, I just do 6 T boiling water and 3 T cocoa powder and just mix it into the whole thing!

I know I say this
about all of my oil-less
muffins, but you literally would never be able to tell that it's just Greek yogurt and
bananas that keeps them so moist.
I was a little skeptical
about adding turmeric to my breakfast
muffins, but the subtle kick of spice works really well with the sweet

Smash up or blend
about a half a
banana or 1/4 cup applesauce to use as an egg replacer in baked goods such as
muffins, pancakes and yeast - free quick bread such as pumpkin bread and
banana bread.
A medium
banana, muesli bar and regular
muffin each contain
about 20 g while a slice of
banana bread provides
about 30.
Each
muffin has
about 1/2 tablespoon of honey and 1/4 of a
banana, which is significantly less sugar than average store - bought
muffins.
The great thing
about these pancake
muffins is they are perfect for lazy chicks, so if you don't have
bananas and / or raisins, use blueberries and strawberries, chopped carrots and apples, or pecans and walnuts.
I don't know
about you, but I love
banana chocolate chip
muffins.
How

It then took me
about 15 minutes to clean the thing out and grind the last 1/2 cup of almond flour to get enough for 1 batch of paleo
banana muffins!
I don't have to ask why

muffins though: chocolate and
bananas are ALWAYS a great combo, especially for breakfast!
