'm a vegetarian and I try to eat

What I love
about Vegan Cuts snack boxes (see a previous review here),
is that it
's often full of brand new treats you probably haven't seen
in stores yet, especially if you live
in Canada!
Luckily, there
are vegan versions of just
about anything you can find
in the market stalls of this amazing city.
I
'm sure you've heard
about this clever
vegan substitute as it made a massive splash
in the plant - based cooking world a year or so ago.
Right now I eat eggs (I talked more
about going
vegan - ish
in this post), but should I decide to nix them, I want to
be comfortable with eggless cooking.
Method: Pre heat the oven to 400 degrees Fahrenheit Saute the onions and cook for
about 7 - 10 minutes until translucent and soft, adding salt to taste along the way While the onions
are cooking, toss the zucchini and potatoes, separately,
in the olive oil, garlic powder and salt, set aside When the onions
are cooked, transfer to a baking dish Add a layer of zucchini, sprinkle the
vegan parmesan Repeat with the potatoes and then zucchini until the dish
is covered, sprinkling the cheese along the way
What I love
about this dish
is that it contains accessible and affordable ingredients, can
be made
in advance,
in bulk, has multiple textures, flavors, slightly sweet with cranberries, slightly tart with tofu, won't spoil
in days, and will leave even your non
vegan peeps longing for more!

in any kind of healthy vegetarian and

about this can get incredibly heated, and I think each to his own, but the devastation a lot of palm oil causes to rainforests and the animals who live there make a lot of
vegans want to choose to go without — I think I have read somewhere that earth balance use sustainable palm oil — not grown
in the rainforests, some people find it easier to avoid palm oil all together as it can
be hard to check where it
is from with each product.
