Lately, I've been all
about big salads that I can eat throughout an entire week.

Life has been crazy and hectic the last couple of weeks, and it's nice to just take a breath and talk
about some recipes that look pretty fantastic while I eat a
big chicken
salad as a late breakfast.
For
about 4 weeks now, for the most part, I've been eating a
big salad for my dinners.
Often
big fancy places like Whole Foods will have roasted garlic cloves for sale (there are
about 15 in a head) or you can even nab some from the
salad bar.
Just a few weeks ago, a
big salad was perfectly satisfying, but now I'm starting to think more and more
about cooking a
big pot of something warm to eat throughout the week.
For the
salad: *
about 1 cup tiny tomatoes (I used a combination of cherry, sungold and yellow pear tomatoes, and sliced the
bigger ones in half) *
about 1 cup chopped tomatoes, preferably heirloom (any color you like) * 1 fat kirby cucumber, chopped
I'm a

The great thing
about this
salad is I prepared all the ingredients the day before and kept them chilled in a
big bowl.
It's chewy and slightly sweet and has a
big, nutty flavor, and it can be used in
salads, soups, riffs on risotto, and
about a million other things
