breakfast at home, went to church, came home for leftovers, went to an open house, took Maggie to the park, made some fun
food items, cleaned the house, worked on laundry, switched summer — > fall / winter clothes, and made dinner!

We used to do all sorts of egg bakes for holiday
breakfasts, but since we can't have eggs due to
food allergies, this is an excellent substitution that no one will be complaining
about!

I'll admit that in the beginning I was a skeptical
about eating rice for
breakfast, but I quickly discovered that it gives me long - lasting energy, makes me feel grounded and keeps me full until lunch - kind of like the very commonly enjoyed
breakfast food, oatmeal.
But I'm really here today to talk
about an avocado, oat and nut
breakfast porridge that I discovered during that honeymoon phase of eating raw
foods.
When I talk to people
about being vegan, and we discuss a whole
food plant - based diet, one of the questions I get a lot (after «what
about protein» and «I could never quit cheese» — questions that we will discuss in another post) is «what do you have for
breakfast?»

about not being able to eat rice pudding for
breakfast reminds me of the Jim Gaffigan bit from «Beyond the Pale» (if you haven't seen it, you must rent it... he is so funny, and 99 % of his stuff is
about food... he is the «Hot Pocket» guy if you didn't know), where he talks
about pancakes being fried cake, and yet that is acceptable to eat for
breakfast.
The fact that my preceptor takes me to the physician's lounge every [week] day has made it so I really only need to worry
about breakfast / dinner, and my church also has a potluck every weekend where my friend's mom sends me home with leftovers, so I've been fairly well - covered in the
fooding department.
The way this recipe came
about was I was thinking
about my Zesty White Bean Toast (another one of my favorite
breakfast / brunch recipes) and I wanted to combine that with my favorite mexican
food flavors AND avocado toast.
Ages ago I read a post
about delivering dinner to a new mom and it suggested to take
breakfast foods along with the dinner.

food - like horrible / lovely cravings just fine I made them gluten free by subbing the flour and wheat bran with just over 1 and 1/2 cups of my usual gf flour (1:1:1 of chickpea flour: arrowroot flour: almond meal +
about 2 Tbsp ground flax meal + scant 1 / 2tsp xantham gum for every 1 cup of mix) and they turned out fantastic!
Even though I'm
food conscious when is comes to traveling — planning out where to eat, slightly stressing
about breakfast options (I have a serious oatmeal habit), scoping out the local specialities —
food is not something I usually bring on planes.
Anyway, I guarantee that the moment you bite into this sandwich, which happens to involve at least two great
breakfast comfort
foods, you will forget
about everything else you have to do today for a few brief moments.
