2 carrots (
about 300gms) peeled & grated 300 gms celeriac (
celery root) peeled & grated 2 large raw beets (beetroot) peeled & grated 50 gms pumpkin seeds juice of 1 lemon 1 tsp raw honey or agave syrup (optional) 3 tbsp extra virgin olive oil 20 gms flat leaf parsley, chopped
Add 1 cup of water, cover the pot and cook on medium - low for
about 15 - 20 minutes or until
celery root is soft.
Let the stew cook and bubble until the parsnips and
celery root pieces are tender,
about 15 to 18 minutes.
Slice the carrots, parsnips, and
celery root and combine them in a large soup pot with
about 3 cups water, the salt, the agave nectar, and the spices.

Chop the
celery roots into chunks
about 1/2 inch in size.

Bring the mixture to a boil and then simmer until the
celery root pieces are tender,
