As someone who
writes about cheese for a living, I'm lucky to eat some of the best cheeses in the world.
I had thought about a lot of other cheeses, and ended up finding this great resource along the way if you ever need to
learn about cheese.
The great
thing about a cheese board is you can assemble it a couple of hours ahead, leaving you time to get ready for the party.
It's a great way to get to meet people, learn
more about cheese, and eat tons of delicious food.
Who
cares about cheese when they have your amazing recipes that taste so good and don't ever make you feel sick after you eat them... because they're plant based?

We love the avocado as a healthy fat, but if you're trying to get used to no cheese on your omelet, an avocado makes a wonderful replacement and can give that cheese like texture (kind of) At first, we couldn't imagine an omelet without cheese, and we were using almond or rice milk cheese, but now that time has gone by, we've actually realized we don't even care
about the cheese at all — and that cheese or no cheese, this omelet is delicious!
Note about the cheese: I do not consider cheese to be a health food, but it does have some protein in it, and omega 7 fatty acids, which are good for your skin if you eat them in moderation.
You could go with no cheese, or use goat, cheddar or queso fresco (I am sounding
ambivalent about the cheese choice, but I think all work here).
