about throwing a lot of great - tasting flours,
coconut oil, flavored
yogurts, and fabulous toppings to these pancakes.
I made a few changes: I used all plain flour (that's all I had), sheep's milk
yogurt (I bought it to try and it's weird / gross so I made these to use it up), a little bit of
coconut oil in replace of
about a quarter of the butter because I didn't want to open a new packet of butter (I'm just lazy:P), and I used 4 small apples instead of 2 big (gasp!).
I remember doing this once before and i had a fruit smoothie at my gym (strawberry & pineapple, non-fat
yogurt,
coconut and protein powder) I had the smoothie
about 10 minutes after my workout.

I made these yesterday using gluten - free oats ground to make oat flour, cooked quinoa instead of quinoa flakes, 1 egg instead of the flax egg, greek plain fat free
yogurt instead of the
coconut yogurt, regular sugar instead of
coconut sugar, and added
about 1/4 cup flax meal.
Even so, the cultured
coconut milk I talk
about above has many of the same health benefits as
yogurt (good bacteria) with less calories and carbs and more fiber.
Instead of using high - calorie milk and
yogurt, this is all
about the fresh fruit flavors and tropical
coconut juice.
