Place
about 1/3 cup of the batter into the waffle iron and sprinkle a bit of the remaining
coconut sugar on top of the batter in the waffle iron (you may want to grease the iron
with coconut oil or butter to keep sugar from sticking), then close the iron and
cook according to your iron's directions.
Meanwhile, make skillet granola: combine old - fashioned oats
with sliced almonds, chia seeds, sunflower seeds,
coconut oil and honey and
cook it in a skillet for
about 5 minutes, stirring often.

A note
about cooking with oils: try to use saturated fats for high heat, like
coconut oil, butter, or lard.
My favorite way to
cook acorn squash is to cut it in half, scoop out the seeds, rub the insides
with coconut oil, and bake at 400 degrees F until they're soft;
about 30 minutes.Then scoop out the insides and refrigerate until you're ready to use.
We now use pastured butter, lard from pastured hogs, and centrifuged
