Broccoli Fennel Slaw Serves 2 - 4 Ingredients 1/2 bulb fennel, thinly sliced 2 carrots, shredded or grated 3 - 4 leaves of lacinato kale, stem removed and chopped 1/2 bunch broccolini (florets and stems), chopped
Dressing 1/4 c EVOO 2 TBSP Apple Cider Vinegar 2 tsp dijon mustard (or skip
for a completely raw
salad) 3 TBSP fresh orange juice (
about half of an orange) 1/2 tsp raw honey S&P to taste (I used a pinch of each)
Since I posted
about my 6 staple
salad dressing recipes (all of which happen to be vegan), I've been wanting to create some new recipes
for you to use those
dressings.
Before learning
about Dr. Perlmutter's Grain Brain theory, I had already been eating
about 5 - 6 avocados a week, taking 1 - 2 tablespoons of coconut oil daily, eating coconut butter, using coconut milk in recipes, using flax seed oil in
salad dressings, fermenting vegetables (especially tempeh
for B vitamins), and taking Krill Oil supplements, while maintaining a mostly vegan diet.
Another great thing
about using kale
for this
salad is that you can
dress it in advance and the durable greens won't get soggy from the
dressing!
One tablespoon has
about 2.5 milligrams of vitamin E. Canola oil is good
for cooking or as a base
for salad dressings.
I do still use coconut oil and ghee occasionally too but AVK avocado is my go - to
for just
about anything from tossing roasting veggies to heating a skillet
for eggs or stir - fry and homemade
salad dressings.
Natural mamas like us use apple cider vinegar
for just
about everything, from the expected (
salad dressing) to the... surprising (cleaning the Mooncup).
