It's true that when I first started this new way of eating I did spend more than usual but now I do a big stock up about once a month then just buy fresh stuff like veg every now and then.

One question I get asked a lot is how to come up with different recipes and have more variety with meals, so I'm going to be talking about that more this month (great for those of you who tend to make New Year's resolutions around cooking more and eating healthier food!).

No, these potatoes don't make themselves, and they do take a bit of pre-planning (I baked the potatoes before mixing with other ingredients (which means I had to remember that everyone's going to want to eat before they want to eat) and, since I wanted these to be weight - loss - friendly, I used this Creamy Italian Dressing (which takes about 5 minutes longer than opening a bottle of store - bought (but really didn't take any extra time because I had some on hand in my frig (which, thankfully, is the norm — we almost always have some in our frig because we eat it on nearly everything (salad, broccoli, rice, cabbage, bread, potatoes, and more) and it gets used in lots of recipes (like Garbanzo Pesto Salad and Chickpea Salad Sandwich)-RRB--RRB--RRB--RRB-.

I wanted to do something a little more fun with my daughter and make a salad of items she loved and picked out her self, that way when it came time to eat it we could talk about how SHE made it and how yummy it was!

The meal options I came up with had to be: # 1 things that would be fairly easy to prepare (I wasn't about to take an extra hour on Sunday to make something elaborate), # 2 had to be foods I could easily manipulate the nutritional profile for (ensuring a balance of protein, carbs, and fat), # 3 the food had to store well in the fridge or freezer, # 4 they had to reheat well in either the toaster or microwave OR be eaten cold right from the fridge, and # 5 ideally, they needed to be things she could easily eat in the car on the way to school (remember, it takes us at least 20 minutes with no traffic to get to school so eating in the car gives us even MORE time to sleep lol).

The more I spent time reading and researching about nutrition and diet the more I've realised what we eat is just a small part of what affects our health.

I totally believe food has more than just one purpose (to nourish), and that it's sometimes TOTALLY about the joy and enjoyment of eating and sharing together.

Nothing about that has changed but the sharing of it, either at a friend or relatives», or just spontaneously going out to eat, has shifted dramatically in the last decade as I began to develop more tactics for avoiding eating with others, or later, when I realized many of my health problems were attributed to food intolerances, and most friends and family no longer knew how to prepare food that was gluten, dairy, and for the most part meat - free.

By reducing the amount of meals you eat each day, intermittent fasting allows you to spend less brain power thinking about what to eat, allowing you to focus more effectively on other tasks at hand.

Other than being really grateful for friends that love to eat and cook similarly to me, and for those that go out of their way to accommodate my gluten and dairy - free needs by learning how to cook and / or bake in this way just so I can be included, I'm learning that being more assertive, giving, and willing to educate others, both about food intolerances and allergies, and about the mental health aspects that some of us bring to eating, are really important.

Since I don't work full time anymore I don't do all of this anymore but I promise the more prep I do the better I feel about my eating that week!

As we really eat Matzo only at the SEDER (we are not religious), I'll give a try to the cruchy ones, maybe my grandchildren will become more positive about Matzos (they do expect however the Aficoman — ALL of them).
