You can
sub in any soft cheese you like here (like cottage cheese), but to be honest, there's something
about the combo of
eggs and chevre that's just right.
So I wouldn't worry
about going vegan —
subbing ground flax for
eggs here.
A quarter cup, or
about 100 g, of applesauce
subs for one
egg, and with the flaxseed it's
about 1 TBS ground and whisked in 3 TBS water.
Might try
about 1tsp of ground chia seed in a couple tablespoon of water as an
egg sub.
I didn't know
about using apple cider vinegar as a
sub for
egg.
For the
eggs, omit and try
subbing 1/4 cup mashed bananas, plantains, or applesauce and increase coconut flour to
about 1/4 cup in order for the patties to hold together.
If the raw
eggs make you too nervous, you can always
sub out only
egg yolks, or use a protein powder like Garden of Life's Raw Protein in its place And I used to use it for lunch
about 3 - 4 x per week.
