For me, spring eating is all
about light meals with a comforting twist.
Although spring officially starts tomorrow and you're probably dreaming
about lighter meals of asparagus, nettles and spinach, I'm here enjoying a bowl of this flavorful winter stew.

Bulking up a
meal light on pasta with tons of fresh veggies — kale, in this case — means you can feel good
about grabbing seconds.
In an attempt to capture this simple yet delicious weeknight
meal I rushed to my room, set up my camera -LCB- neglecting everything I learned

about eating
lighter, healthier
meals and I am all
about that right now as well (well, I kind of always was but moreso now;)-RRB-.
So with the crazy week / month that we've had, I am SO DOWN for easy
meals that we don't have to think to much
about that are healthy and
light.
This is
about as simple as it gets for a
light meal or first course.
A typical full day of eating for me looks like: Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest
meal of the day): 4 - 5 ounces of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted veggies and sometimes a sweet potato or butternut squash Snack: apple with almond butter or a handful of macadamia nuts Dinner: A large salad with all kinds of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a
lighter protein like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this
about 4 - 5 days a week, other days I may omit the snack or keep the snack and omit a
meal, if i do that though I would add a bit of protein with it.
What I've come to love most
about Vinho Verde whites is that their great acidity and
light body make them the perfect accompaniment to
meals that are notoriously tricky to pair with wine, especially Asian - inspired dishes that are heavy on the spice.
About half of the batch made for a satisfying, somewhat -

about and just use up whats in the fridge it really enjoyable - although my family may disagree, given the headless chicken impressions I do at times and the occasions when they find me photographing dinner on the bedroom floor - because that's where the best
light is!
