Duh, I just posted a question
about using a
pizza cutter instead.
Once you have a large rectangle, cut the dough with a
pizza cutter into
about 18 - 21 squares (three columns, 6 - 7 rows).
Use a
pizza cutter to draw lines on the dough
about 2 inches apart.
Using a
pizza cutter, make 1.5 ″ deep cuts lengthwise down the dough on both sides,
about 2 ″ apart.
Using pasta
cutter or
pizza cutter, trim long side of dough farthest from you
about 1/2» from mounds, then trim short ends to create tidy edges all around.
I do this by gently rolling it out on the counter until it is
about 1/2 - 3/4 inch thick and cutting it into squares with a
pizza cutter.
