TLT: How did you go about choosing the particular countries you feature, and how did you gather the information
about school meals in each place?
Dana was my go - to person for information
about school meal funding, a fierce advocate for getting more funding for school food service.
I have conversations with «ordinary Americans» all the time, and I find their
opinions about the school meals served in the very school where they send their kids, or where some even teach, to be out of touch with the foods, the variety and the quality of those foods, offered each day.
To my mind, the spork represents so much of what's
wrong about school meals these days: the emphasis on highly - processed, better - for - you junk food items eaten by hand (e.g., nuggets and pizza) versus whole foods that require a knife and fork; ever - shorter lunch periods, which also encourage the serving of hand - held food; and the environmental waste generated by the widespread use of polystyrene trays, plastic sporks and plastic serving cups.

I have been getting so much useful feedback and information for my book from two surveys I've been circulating: one asking you about the notion of «kid food» and your general thoughts about the role of junk food in your kids» lives, and a second survey just for public school parents, asking your
thoughts about school meals, a la carte snacks and on - campus food fundraisers.
