Sure, images of cows grazing happily in idyllic pastures can make us feel better
about our skirt steak.
And to think I JUST had a conversation with my mom
about skirt steak and how it's not the cheap steak cut anymore!

To start, cut the
skirt steak into
about 3 ″ pieces.
Grill until medium - rare, 5 — 7 minutes per side for flank
steak,
about 2 minutes per side for
skirt steak.
About 30 minutes before cooking, remove
skirt steaks from refrigerator.
