If you remember the post I wrote last year for Healthy
Avocado Brownies, I talked
about how much I love working
with this brand to bring
avocados to the world!
Other accompaniments included baked sweet potatoes,
avocado crema (blend two
avocados in the food processor
with a big handful of cilantro leaves, lime juice, salt, and garlic to taste plus a bit of water to blend), Frog Ranch salsa, and red cabbage slaw (thinly slice a head of red cabbage and add a handful of cilantro,
about 3 tbsp apple cider vinegar, a drizzle of honey, and sea salt).
Given our passion
about the link between diet and health, we created this recipe out of a fun natural partnership
with the Hass
Avocado Board, who has teamed up
with the American Diabetes Association in a national Stop Diabetes movement to increase awareness
about the role that good fats play in daily nutrition.
To make guacamole, mash two
avocados with the seasoning (
about 1-1/2 tsp), then stir in 1 chopped Roma tomato.

avocado, fresh tomato, an overeasy egg, and Cabot cheese.

Quite a while ago, I got it into my head to make mayonnaise
with avocado oil and Meyer lemon after my uncle posted
about it on his blog — it just sounded so good — and then when I finally got around to making it and discovered that a little bottle of
avocado oil is fifteen dollars -LRB-!!)
I am all
about the green today
with an easy, healthy Asparagus
Avocado Soup.
Place on a rimmed baking sheet, drizzle
with 1 tablespoon
avocado oil, season
with salt and pepper and roast for 20 minutes, flipping
about halfway through.
This should last
about 3 to 4 days in the fridge Just make sure to tightly cover it
with plastic wrap and sometimes I'll even press the plastic wrap into the tuna
avocado mixture just so it stays fresher longer!

Sunday supper came
about in mere minutes — and
with a quick sear on both sides, I found myself plating the slivers of gorgeous tuna in minutes, resting it on a willing bed of baby arugula and perfectly ripe
avocado.
When Wholly Guacamole contacted me
about creating a breakfast recipe using their pre-packaged guacamole that is made
with fresh
avocados, I was stumped... who eats guacamole for breakfast?
Packed to the brim
with juicy tomatoes, fresh herbs, ripened
avocado and seasoned Old Bay Shrimp, this recipe has become a new favorite for Adam and I. What's great
about this dish is that it makes a huge quantity and is perfect for «second dinner» as Adam refers to it.
To assemble, spoon
about 1/4 cup pork down center of each lettuce leaf, top
with 2 tablespoons
avocado, 1 tablespoon bell pepper, 2 teaspoons aioli and 1 or 2 sprigs cilantro.

Avocados contain
about 20 vitamins, minerals and phytonutrients, including 4 % of the recommended Daily Value (DV) for vitamin E, 4 % vitamin C, 8 % folate, 4 % fiber, 2 % iron, 4 % potassium,
with 81 micrograms of lutein and 19 micrograms of beta - carotene.
Top each
with about 1/3 c. of the Spicy Chile Sauce and top
with avocados, corn, jalapeños and black olives.
Fill a small saucepan (I use a 1.5 qt)
with avocado oil and heat to 375 ° F (
about medium heat).
(I've actually made quinoa so rarely so far that I've * only * made it
with recipes that include
avocado... something
about the flavor / texture combination works so well!)
One of my favorite things
about it is the dressing because it's oil - free and is made
with avocado, giving it much more nutritional value than your average dressing (especially if it comes from a bottle!)
These bite - size Lectin - Free Vegan Chocolate
Avocado Pistachio Truffles are made
with only a few clean ingredients and are ready in
about 5 minutes!
What's awesome
about the split peas in this soup is that I could afford to blend them up
with some Post-Superbowl
avocados left over from «Guac-fest» last week....
Super light, and refreshing these mango summer rolls
with avocado are smooth, creamy, nutty, salty, sweet, and just
about everything in between.
This simple combination of garlic, Dijon mustard, salt,

Avocado Mango Spinach Drink!!
Now you can feel a little better
about indulging in this tasty treat because I've swapped out half of the butter
with some gorgeous green California
Avocados.
Avocado saves the day here, loading up this collard green pesto chickpea salad
with healthy fats while also keeping it oil - free which I know many of you will be happy
about.
About 20 of us bloggers and food writers came together
with our cameras and appetites to watch the Too Hot Tamales prepare four courses, all containing
avocados, which would be perfect for Cinco de Mayo celebrations.
Salad
with romaine or butter lettuce, sliced cucumbers and peppers and 1 red container (4 ounces) of grilled / roasted chicken
with 1 orange container (
about 2 tablespoons) of homemade dressing (made
with extra virgin olive oil, white balsamic vinegar, garlic, onion, pepper and oregano)-- Sometimes I top
with a little cheese and
avocado and / or eat
with WASA crackers or a piece of fruit
To the bowl, add
about 3/8 cup blackened chickpeas (a fourth of the recipe); a big handful of chopped cabbage; 1/4 cup salsa (or to taste); and top
with 1/4 cup of the
avocado mixture.
There's something
about steak and tangy balsamic dressing that just pairs beautifully together and
with sweet strawberries, creamy
avocado and crunchy sliced almonds, this seemingly simple salad may just knock your socks off!
I don't know
about you, but when I make guacamole, I do it the old fashioned way — mashing the
avocados with a fork.
At the same time, I had to replenish my post workout meal (aka sweet potatoes) so I baked these in the oven in 425 °F for
about 45 minutes after brushing them
with avocado oil.
What
about a salad of greens, sautéed squash and asparagus,
with avocado, blueberries, and thinly sliced pork tenderloin topped
with fried cheese?
Another thing I love
about this -LCB- skinny -RCB- taco salad
with avocado cilantro dressing is you can chop up a ton of veggies and have it ready to eat on a whim.
Top
with about 3 slices of the
avocado, then cover
with bun top.
Everything

The way this recipe came
about was I was thinking
about my Zesty White Bean Toast (another one of my favorite breakfast / brunch recipes) and I wanted to combine that
with my favorite mexican food flavors AND
avocado toast.
Now I'm all
about quinoa salads (
with some of my favorites being my vegan arugula quinoa salad, and my vegan
avocado boats
with quinoa hearts of palm salad) but this vegan quinoa
avocado salad
with pineapple might just be a new favorite.
A note
about avocado — when you have chopped
avocado in any pre-made salads, the trick to keeping it from turning brown is tossing it
with a generous amount of freshly squeezed lemon juice.
