I am bound to love just
about anything that contains these bright
orange vegetables, but one of my absolute favorite dishes is
sweet potato gnocchi.
If you love the tangy,
sweet taste of creamy, frosty
orange smoothies that are often quite popular in mall food courts but aren't crazy
about the fact that these smoothies are typically a total sugar bomb, this lightened - up version is worth a try!
Preheat the oven to 400º F and bake
about 4 medium - sized
sweet potatoes (the
orange ones) for an hour, until the skins are practically falling off.

sweet potato, but that sounds really yummy.

Add the onions and
sweet potatoes and sauté over medium heat for
about 10 minutes, until the yams soften and take on a brighter
orange color.
The best bit
about the flavour is the
sweet orange combined with the juicy plump raisins with a hint of cinnamon.
I've made this cake
about a dozen times now (and once or twice with cooked, mashed
sweet potatoes), and believe this recipe is delicious no matter which starchy,
orange veggie you choose to include.
