I have thought
about making it many times (the
recipe sounds delicious but the title, I confess, is what really lured me in), but I also LOVE spotty
bananas, and between that, and, well, nursing school, I just haven't gotten around to baking it in the last couple of years.

about this
recipe is that it makes the large amount of
banana do the work of some of the sugar and fat.
I have made
banana bread before, but my husband has never raved
about it like this
recipe!!
Here's what I changed: I used a 15 - oz can of pumpkin (not pie filling — just pumpkin puree) in place of the
bananas; I swapped out the spices for
about 1 tsp each of cinnamon and ginger, and mixed those in with the pumpkin first; I opted for the larger volume of maple syrup from the original
recipe, as the pumpkin wouldn't contribute sweetness the way the
bananas do; I baked the batter as a dozen standard muffins, which took
about 20 minutes at 350.
Last month, I excitedly tweeted
about a fantastic new

recipe I had just pulled out of the oven.
I know that it's almost Thanksgiving, and that I'm supposed to be talking
about cranberries or what to eat with your turkey, and that you and I both have planes to catch and grocery lists to write, but please consider filing away this
recipe for the future, a future after the holidays, when you may find yourself with a couple of free hours and a defrosted ham bone that was once lost beneath some frozen
bananas.
This vegan peanut butter and jelly

about 2 tsp.
As I walked into the kitchen I started thinking
about how I could put some sort of twist on the
recipe and make it something a little more than your typical loaf of
banana bread.
What's not to love
about a
recipe that includes peanut butter, chocolate, and
bananas!
At that time, there were plenty of blog posts
about using things like applesauce, mashed
bananas, and pumpkin to replace eggs, but generally those only really work in sweet

The specific flavor combination for this

about when a colleague asked me to bake a
banana layer cake for the team.
The other great thing
about this

recipe is that the leftover pancakes freeze beautifully (and we usually do have some leftovers).

I will be trying this
recipe without maple syrup as I think they can easily be made without — 30 ml contains
about 15g of sugar which is equal to
about 1.3 g of sugar per muffin, the dates contribute 7g of sugar, the
bananas provide just under 1.8 g sugar per muffin, the coconut milk provides less than a gram.

banana, and a gingerbread flavor!

about vegan at VegKitchen, feel free to sub maple syrup for the honey.

I've been hearing
about banana bread for few years, I saw many different

banana bread on food blogs, TV shows or cookbooks but never felt really tempted to finally give it a try.
I feel the same way

While I credit my friend Emily for the base
recipe with 3 ingredients, I originally read
about the magic of
banana + egg pancakes here (I prefer the 3 ingredient version to the 2 ingredient though!).
