Don't know
about this recipe, but I've used pure apple juice in place of
white wine before, but that was in concert with tomatoes — if you want the slight vinegar taste, rather than a
sweet tang, perhaps add a few drops of
white wine vinegar.
To make a sheet pan meal, I just marinate the veggies and protein I want to include (and typically I include a starch like
sweet potatoes,
white potatoes, or squash) and roast on a sheet pan at 400 degrees Fahrenheit for
about 25 minutes.
I do love
white sweet potatoes; I'm not sure if the ones you can find are the same we have in the States — but there is something
about the beautiful orange flesh that makes it not quite the same!
Other odds and ends — all in very small amounts of 2 to 4 tablespoons — in addition to the refried beans, Mexican rice, eggplant, tortillas, and grilled bread included a more risotto - like rice, caramelized onions (sort of fajita style), bronzed carrots (slices of carrot roasted with blackening seasoning and brown sugar), green beans cooked with tomatoes and onion, very thick pureed

sweet potato fries, a couple of artichoke hearts, a dab of roasted red peppers, and half of a veggie burger made with black beans and corn.

sweet and
white potatoes into large dice (
about 3/4 inch).
I swear, there's something
about mixing tart with
sweet that makes the cranberries and
white chocolate work in perfect harmony here in these light, fluffy muffins.

about every 4 hours and to stay away from most fruit,
