This delicious, crock pot soup recipe has all of the flavor of that childhood winter favorite soup, but uses herbs and spices in place of the usual
diced ham, to
add flavor and make this recipe suitable for vegan and vegetarian diets.
If you want more protein in it,
add a quarter cup of
diced bacon or lean
ham.
The first time I made it as the recipe was written, but quickly realized how adaptable this is - the second time I
added fine -
diced leftover Christmas
ham into it also.
Mix the soup well, and
add 3 tablespoons fresh minced parsley and 2 cups of
diced cooked
ham, mix well.
For instance,
add lean
diced ham to lentil soup or pea soup.

add more toppings here — peppers, onions, pepperoni,
diced ham — whatever your favorite pizza is, feel free to
add it here!
You can be creative by
adding a variety of ingredients such as sea salt, cracked pepper,
diced ham, bacon bits, shredded cheeses,
diced vegetables and fresh herbs.
