When a dinner of cheese and butter and noodles sounds a bit too indulgent, just
add roasted veg.
Not exact matches
So the grains,
roasted veg and hummus I prepare in advance and keep in tupperwears in the fridge but of course eating the same three things everyday would get boring so I then buy a variety of other
veg to
add in each morning.
I was going to be lazy and just cook the veggies in a crock pot, but glad I didn't, as
roasting caramelizes the
veg and
adds a wonderful flavor that you just can't get any other way!
I had the chicken marinading for 5 hours and
veg (onion, pepper and mushrooms)
roasting for 20 mins, before the meat was
added.
Did end up using all of the yogurt dressing, and next time I'd
add a larger relative quantity of
roasted veg as the whole dish was orzo - intense.
Take a big «ol rimmed cookie sheet,
add vegetables, some flavourful meat, a dash of spice and salt, and bake it all up until the
veg are soft and brown, the meat is cooked and juicy, and your house smells like you spent all day — and a pile of pots and pans — searing,
roasting and braising.
Often the
veg are brocolli and fried red onion or
roast onion and fennel classic tortilla / spanish omlette noodle soup — use instant stock cubes but simmer it with star anise, soy, slice of ginger, dried chilli, black cardamon, dried shitake etc for an hour or so before removing the spices and
adding the noodles /
veg.
I
added a few garlic cloves to the
roasted veg mix and served with greens on the bottom instead of the top (I like them to wilt a bit under the hot vegetables).
Bonus points for
roasting or grilling
veg like scallions and broccoli rabe before throwing them in the food processor (or blender, or mortar), which will
add some nice caramelized flavor.
You can
add them raw; you can
add some leftover grilled
veg, extra
roasted sweet potatoes from dinner two nights ago... it's all fair game.
