Regarding your question, in all honesty I wouldn't
add the baking powder here.

Added in a teaspoon of
baking powder as some of the comments suggested, as well as nutmeg, cinnamon and a large spoon of Old Monk Rum — a big favorite
here in India.

baking-soda You may need to
add a bit of lemon juice.
Wonderful recipe, but
here's the secret:
Add BOTH 3/4 t.
baking powder AND 3/4 t.
baking soda.
2 eggs (if you are egg free I do think 2 flax eggs would work
here - they might not puff up as much but it would still work - perhaps
add a bit of
baking powder for the rise?
