May I suggest setting aside some Of the starchy pasta water to
add to the sauce instead of hot water to stretch it out?

I've been thinking about replacing the avocados and my best recommendation would be
to add 1 cup of soft boiled peas and 1/3 a cup of soaked cashews into the
sauce instead.
I also suppose I could have
added more
sauce to my pasta at the end
instead of saving so much for another meal.
I made these last night with the following variations — tamari subbed for soy
sauce, almond butter
instead of peanut (I don't like peanuts or their butter), and I
added italian seasoning, garlic salt, and oregano
to taste.

added corn
to help give it more of a chili flavor

to the supermarket was out of the question, so i ended up subbing unsoaked * gasp * walnuts for cashews, used the 2tsp of dijon and extra salt / nutritional yeast

add the cheese and I use arrowroot
