Add the ghee to the hot pan and then
add the zucchini mixture in 2 inch rounds.
Once the oil is hot,
add the zucchini mixture a heaping tablespoon at a time and flatten out the tops slightly to make them pancake shaped.

Add the garlic to the

Next, just spread the entire pesto
mixture onto the dough and
add the
zucchini, summer squash, and tomatoes.
Crumb toppings normally appear on fruit desserts, but a savory
mixture of grated pecorino and toasted walnuts works in much the same way,
adding textural contrast to delicate fettuccine and grilled
zucchini.
Dice the eggplant,

add the flour
mixture.
Add the
zucchini and onions to the egg
mixture and combine well.
Two things I think could help — making sure to ring out the excess liquid in the
zucchini (after grating it) by squeezing it through a cheesecloth or towel and also
adding a bit of flour (quinoa flour for example) to the
mixture should help these stay together.
I did
add zucchini to the meat
mixture so that it would keep the burgers moist.
Add to bowl with egg
mixture and repeat with remaining
zucchini mixture.
I'm thinking next time I would roast tomatoes separately, and
add them on top of corn, scallion,
zucchini mixture.
