So, I substituted organic - no - sugar -
added apple sauce for the eggs.
I made them GFDF and
added some apple sauce while leaving out some milk and it worked great.
We reduced the butter / oil content drastically and added organic, no sugar
added apple sauce instead.
I also substituted organic no sugar
added apple sauce for the honey because I am on a no sugar diet.
Add apple sauce, cottage cheese, maple syrup, and stevia.
In a large bowl mix the dry ingredients;
add apple sauce and egg whites to dry ingredients.

Hi Cristina, if you
added all the
apple sauce to the batter it will naturally be a bit too liquid and that is probably why they ended up being too moist inside.
I
added a drizzle of maple to the remaining unsweetened
apple sauce (that went into the center) and also brushed a bit of maple on the top of the muffins in the last 5 mins of baking — so wonderful!
Next
add the dates, coconut oil and
apple puree into a

I just made this, followed recipe exactly, using
apple sauce,
added a cup of pecans and did use 1 egg (we are not vegan).
