For this version, I kept things simple and only
added chopped butternut squash and dried coconut — it can be as simple or as involved as you'd like.
add chopped butternut squash and water / stock, bring to boil, then simmer for awhile.
Add the chopped butternut squash and stock cube and let simmer until the butternut squash is tender (approx. 25 - 30 minutes).

This reminds me of my favorite quick / easy / delicious winter dinner: peel and cube a
butternut squash, sweat it with a
chopped onion and some garlic in a stockpot until soft, mix in 1/2 (or whole) can of coconut milk,
add curry powder, salt, and a splash of sriracha to taste, puree the whole thing (I love my immersion blender!)
Then you're going to brown your chicken,
add the
butternut squash red enchilada sauce, and then towards the end of the cooking, you'll
add in the
chopped kale.
I also
added more veggies than you normally see, including
chopped kale, roasted
butternut squash, and mushrooms (if you make the vegetarian version).
To make the
butternut squash mix: heat two tablespoons of olive oil in a pan,
add chopped onion and saute for a 2 - 3 minutes.
Added peeled, diced
butternut squash (small one), 1 peeled
chopped Empire apple, and 2 cans of vegetable stock.
Chop the
butternut squash into 1 cm chunks with the skin on and
add to pan.
Feel free to
add any extra veggies that sound good to the base recipe above — we also love roasted sweet potatoes,
butternut squash, and asparagus during cooler months, and
chopped cherry tomatoes, diced red pepper, sweet corn, and grilled zucchini /
squash in the Summer.
Next,
add in the
chopped butternut squash and give it all a squick stir just to coat the
butternut squash with oil, then
add in all of the vegetable broth and
chopped fresh sage.
