It's great for
adding coconut flavor and can serve other purposes, but not very useful as a thickening agent (after all it's just tiny shavings of coconut that are hardly more absorbant than a nut flour).
Coconut is quite tricky, as it absorbs a lot of liquid, and the resulting texture (when I've used it in other recipes) is quite different, plus
it adds coconut flavor, which I'm not sure how it would work in combination with the feta cheese... So, I would not suggest using it here.
BTW, I've done this cookie using all almond flour and it's good, but the coconut flour helps to with moisture content and crispness without
adding any coconut flavor.
The filling is made by melting 1 stick of butter (about 1/2 cup) in a medium - sized sauce pan with 3/4 cup coconut sugar, the sweet potatoes, the coconut milk (which does NOT
add a coconut flavor) and the spices.
