Packaged coconut - oil products and lauric - type hard butters sometimes contain
added lecithin, which acts as a moisture scavenger, thereby retarding hydrolytic rancidity development.
Add the lecithin and blend well again.
If you want to do that, I think
adding some lecithin would help as it helps to maintain surface tension.
