Made a few changes, used white wine vinegar because I didn't have red,
added roasted broccoli and sliced avocado, and mixed it with spinach and alfalfa sprouts.

Add steamed

Bonus points for
roasting or grilling veg like scallions and
broccoli rabe before throwing them in the food processor (or blender, or mortar), which will
add some nice caramelized flavor.
In this photo we used onions and spinach, but you could easily
add sliced shiitake mushrooms, sliced zucchini, leftover
roasted winter squash, or thinly sliced
broccoli.

Just cut up cooked
broccoli, asparagus, green beans, raw carrots, and
roasted corn into neat little chopped bits and
add cilantro and avocado, then toss it.
