I might also change this recipe up by using
roasted or rotisserie chicken in place of chickpeas (as a few people have mentioned),
adding cherry tomatoes, artichoke hearts, parsley, haricots verts, or bell pepper.
Feel free to also
add any extra veggies that sound good to the base recipe above — we love
roasted broccoli, sweet potatoes, and asparagus during cooler months, and chopped
cherry tomatoes, diced red pepper, corn, and grilled zucchini / squash in the Summer.
You could build on this simple salad by
adding orange segments,
roasted red peppers, olives or
cherry tomatoes.

roasted sweet potatoes, butternut squash, and asparagus during cooler months, and chopped
cherry tomatoes, diced red pepper, sweet corn, and grilled zucchini / squash in the Summer.
I reheated the third serving last night and

The original recipe calls for
roasted aubergine, chickpeas and
cherry tomatoes; for this version I
roasted butternut squash (first one of the season),
added in mushrooms and threw in a few
tomatoes which I had sitting in the fridge.
Broccoli and peppers are great, and you can also try zucchini,
tomatoes or
cherry tomatoes, carrots, aubergine, asparagus, cauliflower, etc... to make the veggies more flavorful you could also
roast or grill them, before
adding to the tart.
I made this for dinner tonight (with some
roast chicken) and
added some sliced
cherry tomatoes... delicious!
If you are short of time you can certainly use fresh
cherry tomatoes in place of the oven
roasted cherry tomatoes - but they do
add a little something special to this dish.
Dollop some in a baked potato,
add a layer in a panino, enhance a steak or piece of chicken with it on the side, use it to
add to
roasted cherry tomatoes... the yummy possibilities for using this summer - fresh green pesto is endless!
I'd imagine this would be good with a variety of
add ins — bacon might be good, but if you happen to have some home
roasted cherry tomatoes, you might try those out, too.
