I'm thinking of
adding some grated carrot and zucchini to the mix (trying to get as many vegies into my kids as possible hehe)..
I even thought of
adding grated carrot, which I might try next time.
I mixed and matched this recipe and you're other zesty scones recipe - leaving out maple syrup and coconut oil and
adding grated carrot and extra almond milk to bring together!

I have been using your Traditional Irish Soda Bread as my mainstay (use to be the

added grated apple, poppy seeds, dates...) and at Easter I was missing the taste of Hot Cross Buns so I
added 1 / 4cup currants, 1tsp cinnamon, 1 / 4tsp nutmeg, dash of clove & allspice and 1 / 4cup diced candied peel to the soda bread and it was a great substitute.
P.S. I put
grated carrots on all my stir fries, it
adds a little je - ne - sais - quoi.
Add the dry mix to the wet mix just until combined and then gently fold in the
grated carrots.
Try
adding sunflower seeds with blueberries, or
grated carrot with walnuts.

Blend all ingredients together, except for the
grated apple,
carrot and nuts which you want to
add AFTER blending the rest of the ingredients (you do this to retain their texture; also, you don't want to blend the
carrot in there and the apple and release all of their liquid, creating a kind of pureed mush).
