I make my tomato tart very similarly, with
addition of fresh thyme and rocamadour usually; the only difference is that I simmer tomatoes with some oil and garlic for 10 - 15 minutes and then I put them on my tart, so the excess of juice may evaporate a bit.
I love
the addition of fresh thyme to the pie - herbs in sweets are one of my favorite pairings.
