Nankhatai are Indian shortbread cookies that are made with clarified butter or ghee instead of butter and get a rich flavour with
the addition of chickpea flour or beasn.
Still very seedy, I found
the addition of chickpea flour to have an aftertaste I did not enjoy, but I imagine you could substitute a variety of grain free flours.
And it doesn't contain any onions or garlic, instead, it gets a special flavor from
the addition of chickpea flour.
The addition of chickpeas accomplishes all of these things; they stand up well in the salad, compliment the nutty flavours of the wild and brown rice, and combine with the rice to make a complete protein.
The addition of chickpeas, tart cranberries, and a seasoned mayonnaise make it even more delectable.

The protein comes from the
chickpeas and sunflower butter and the
addition of protein makes you feel fuller so you crave less and are satisfied with less.
The
addition of the roasted
chickpeas adds a fiery crunchiness, the contrast in texture is what makes this salad super special for me!
I love soup any time
of year I love the beautiful color in this dish, and
chickpeas make a great

chickpeas, rinsed and drained (1.5 cups cooked
chickpeas) 1/4 cup chopped fresh mint, plus extra for garnish 1/4 cup chopped fresh cilantro, plus extra for garnish 4 ounces angel hair pasta (note: I substituted one zucchini that I had spiralized, being sure to then cut them into manageable lengths)
-- 1 cup
of cooked
chickpeas — 1 1/2 cups sprouts — 1 lemon (small squirt
of lemon juice for each wrap)-- a few shakes
of dried parsley per wrap — a couple pinches
of sumac, for an extra sour bite — 1 bunch
of kale (optional), this isn't a usual
addition to the wraps but I had some leftover kale that needed to be used
