Grape tomatoes and mushrooms were on sale on the weekend, and
after halving the tomatoes and quartering the cleaned mushrooms, they were each put into their own jars and brined.

The idea of adding

tomatoes is genius, and this sounds like the perfect thing to make

tomato will work), cut them in
half, place them on a parchment lined baking sheet, sprinkle the cut side with fine sea salt, drizzle the
tomatoes with olive oil, turn the
tomatoes over and drizzle the skin side with olive oil, roast in oven at 450 degrees fahrenheit for about an hour (check
after 45 minutes).
After taking 6 whole wheat English muffins (the whole muffins, not
halves), 1 1/2 cups smashed oven (you can cook them for a shorter amount of time for saucier
tomatoes), chopped artichoke hearts, baby spinach leaves, fresh chopped basil, fresh mozzarella, and balsamic vinegar.
I also
halved some cherry
tomatoes as an
after thought because I prefer my food to range the full rainbow spectrum.
