Hi Sandra, quick question, can you use guar gum instead of agar -
agar because it's so expensive and I noticed with soba noodles all the ones I found have a little sugar in them, would it set me back if i ate some that contained less than 1 gram?
Hi Sam, I don't recommend substituting
agar because it's a gel and doesn't work the same way as xanthan gum or guar gum.
