so good depending on the their character.
So those who are lactose intolerant may be able to better enjoy
aged cheese.
You also should know that for
cheese made from raw (unpasteurized) milk, the FDA requires it to be
aged for a minimum of 60 days
so that makes it automatically lactose - free and SCD legal IF the
cheese is on the BTVC book and BTVC website list of permitted
cheeses, AND its ingredients are SCD legal!!!

A sharper
cheese like an
aged cheddar has a natural kick,
