Though the
cake in the photographs is slightly overbaked, it still turned out well, the
oven providing a toasted
almond flavor to the outer edge.
After the
cake has been
in the
oven for 15 minutes, make the
almond topping by combining the sugar, nondairy milk, vegan butter or coconut oil, and sliced
almonds in a small saucepan and bring it to a boil.
If desired, garnish
cake with 1/4 cup sliced
almonds, toasted
in a 350 °F
oven until golden brown, about 10 minutes.

Directions: Preheat

cake and indeed make it very light and moist, not to mention that it takes less than 10 minutes to throw together (before putting it
in oven) and it is totally gluten - free and refined sugar - free (of course!).

Hi Renee, this
cake is moist already so using
almond flour you may have to keep it
in the
oven longer.
