as I find this helps the ingredients process a little easier.

The only real differences from the valentine's day version are that the
cookies have ground
almonds instead of hazelnuts (
as well
as sprinkles to be like new year's confetti), and the meringues are swirly and colorful.
To be honest, I don't know what other flours would work with this - I did just post some 3 ingredient banana bread
cookies using
almond meal which taste great and are just
as easy
as this
For posher cakes and
cookies that take very litle flour, anyway, I use
almond meal
as one would for classic tortes.
It's pretty much the same
as the
cookie crust I used in these Peanut Butter and Chia Jam
Cookie Cups, except I used
almond butter instead of peanut butter.
I used soy milk instead of
almond, used double the amount of baking powder because I did not have any baking soda, used 1 egg
as I found the mixture to be extremely crumbly, and used dark choc chips which sadly did contain dairy (it's all I had in my pantry, a day before pay day) BUT these were still some kick ass
cookies.
These
cookies don't have the same depth of flavour
as these (which are filled with brown sugar, have a crunch from
almonds and get sprinkled with sea salt), but they are ideal if you want a soft, super thick and chewy chocolate chip
cookie.
These
cookies are only two bites each, use real (good) butter, and
almond flour
as the base.
