I just
made these cookies and I have to say I found the

I subbed in 1 tsp of vanilla for the
almond extract and used it for
making our Easter lamb cake.
Although I have never tried
making these amaretti cookies with bitter
almonds, I would eliminate the
almond extract altogether and just add that one ounce of bitter
almond without reducing the amount of
almond flour.
