The health benefits of both beans and tomatoes outweigh the concern about BPA in cans, but you can
also cook dried beans to use in this recipe if you'd prefer.

Of course, you could
also use
dried beans and
cook them in large batches (something I really want to get into the habit of doing more), but to save time, I often find myself grabbing for a can of organic
beans.
Also, I find that adding a little salt when I soak
dried beans makes them turn out better when I
cook them, and here's a video from America's Test Kitchen that explains why.
Undercooked
beans don't taste good, no matter what you're going for (I
also wanted to avoid having to
cook beans from
dry in what should be a relatively quick and easy recipe).
Using the is liquid drained from a can of legumes such as chickpeas or small white
beans, is probably the simplest way, but you can
also get aquafaba from
cooking dried beans in water for a couple of hours.

I used a mix of
beans, tinned chickpeas (S&W brand tend to be lovely and soft and
also great for humus) and
dried fava
beans, which I
cooked for 20 minutes or so until tender.
And yes, you can
also sometimes use canned
beans, but if you have time on the weekend, it's worth
cooking a big batch of
dried.

If you don't feel like using the slow
cooker you could
also just make it in a big pot on the stove — I'd say you'd want to simmer it for about 3 hours if you use
dried beans, but if you use canned then you could probably get away with maybe 30 - 45 minutes of simmering on the stovetop.
I
also freeze
cooked legumes, such as
beans and lentils, burgers, lentil loaves and snack bars made out of
dried fruit and nuts.
Dry leaves, threshed pods, and stalks of various
bean plants are
also used as fodder for livestock or as fuel in
cooking.
