Next time I just used some cooking spray in the muffin tin and
I also grated my apple (large grate).
It contains not only grated carrots but
also grated apple, rice flour, eggs, brown sugar, coconut oil, baking soda and pecans.

Blend all ingredients together, except for the
grated apple, carrot and nuts which you want to add AFTER blending the rest of the ingredients (you do this to retain their texture;
also, you don't want to blend the carrot in there and the
apple and release all of their liquid, creating a kind of pureed mush).
You could
also use a
grated apple in these pancakes and change out the cardamom and ginger for cinnamon and nutmeg.

There were some minor changes in the recipe, mostly due to limitations of my pantry: we do not have frozen
apple juice concentrate here so I just finely
grated some
apples and added a pinch of sugar, let it sit for a few minutes to give the juice time to come out; o) I
also used fresh
apple juice instead of the water and didn't have any nuts on hand (silly me forgot to check and realized the were all gone when I as in the middle of baking) so I just crumbled some Italian nut cookies on top of all.
I
also made another batch, this time borrowing from a different recipe and adding one small
grated apple to the batter (keeping all other ingredients the same).

grated apple — it was marvelous.
You can
also add
grated apple or pear which will decrease the amount of sugar you need to add.
Note: Since I am from the «waste not / want not generation» I have
also sent in a recipe which uses the
grated carrots and
apple shreds that are left over...
